Studing the Performance of Rotary Dryer in Drying Enzyme Products

  8. Drying is one of the important downstream processes in the production of biotechnological products. The dryer design for heat-sensitive materials such as proteins requires special process considerations. In this study, a rotary dryer evaluated for drying protein products. The used liquid enzyme as model, a bacterial α-amylase, first, immobilized on sodium sulfate and sodium tripolyphosphate as carriers in a spraying mode and then, the obtained wet solid materials containing the enzyme, dried in a batch dryer. The performance of this dryer investigated to achieve suitable properties such as the enzyme activity and the final moisture content of product by changing the process conditions. Experiments design done by the Minitab software and the surface response method was used to analyze the temperature (40-80 °C) and volumetric flow rate (20-40 liters per minute) of drying air, the rotational speed of drier (15-25 rpm) and the drying time (15-20 minutes). Results showed the importance of four variables, although the two variables, the temperature and the time, had more effects on the enzyme activity loss and moisture content than the others. Under different processing conditions, the highest and the lowest percentage of the enzyme activity loss during drying were 22.7 and 2.6 corresponding to 4 and 12.2 % moisture content of dried materials. By optimizing variables in order to minimize the final moisture content and the activity loss and the prediction of model achieved by regression of effective variables, the activity loss and moisture content were 11.5% and 8.2%, respectively
