    Survivability and oxidative stability of co-microencapsulated L. Plantarum PTCC 1058 and DHA as a juice carrier

    Abstract
    Lactobacillus Plantarum PTCC 1058 bacteria and DHA-rich oil were microencapsulated together or individually in an optimized alginate-pectin-gelatin biocomposite hydrogel. The survivability of L. plantarum and oxidative stability of DHA were evaluated using simulated gastrointestinal (SGI) conditions and 4 wk storage in commercial orange juice at 4 and 25 °C. The results showed that the multilayer biocomposite had significant influence on the stability of the microcapsules in terms of survivability of probiotic bacteria and oxidative stability of DHA with SGI conditions and storage at 4 and 25 °C compared to the free cells.     Abstract
    In this paper, LM pectin production from commercial apple pectin by using acid, alkali and ammonia methods in the presence of ethanol was studied. Also, the effect of different parameters such as, temperature, time, acid, alkali and ammonia treatment in LM pectin production were evaluated. In all the experiments, low temperature showed a better influence from a recovery, purity and low de-polymerization viewpoint. Optimum conditions in the acid method reached at pH = 2, t = 17 hrs and T = 30°C, in the alkaline method reached at pH = 11, t = 3 hrs and T = 5°C and in the ammonia method reached at 2 N ammonia and T = 5°C, were determined. © Sharif University of Technology

    Abstract
    Most natural folate derivatives are highly sensitive to temperature, oxygen and light and their stability depends on food process condition. Alginate and pectin were evaluated for folic acid encapsulation and increasing its stability. By combining them and optimising encapsulation condition the efficiency was enhanced up to 90% . Furthermore, using polymers in combined form caused decrease in folic acid leakage from capsules in acidic condition of stomach.     Abstract
    Pectin from two different plant sources: apple and sugar beet was studied. Apple pectin was modified by chemical treatments such as: acid, alkali and ammonia, so as to obtain an ester level equal to or less than 50 %, which is described as low methoxyl (LM) pectin. LM pectin form gels with significant characteristic. In this study, de-esterification of apple pectin with acid treatment resulted in gel specification with higher molecular weight and viscosity.     Abstract
    In this research, gel production from the extracted pectin gel of shahroud sugar beet pulp has been investigated. The pectin extractions were performed in a cold alkaline solution and a hot acid solution, respectively. The effects of different parameters, such as percent of sugar, pectin concentration, calcium content and quantity of peroxidase enzyme, hardness and content of water absorbed by the gel, were studied.     Abstract
    The aim of this study was to investigate the co-microencapsulation of Lactobacillus plantarum and DHA-rich oil in a novel gastrointestinal-resistant biocomposite composed of alginate, pectin and gelatin. The optimal biocomposite consisted of 1.06% alginate, 0.55% pectin and 0.39% gelatin showed 88.66% survivability of the microencapsulated cells compared to the free cells (50.36%). In addition, co-microencapsule containing probiotic and DHA fatty acid was synthesized and physicochemically analyzed using SEM, FTIR, TGA, XRD.
